Food & Nutrition Manager
About the role
Works with the Director of Culinary Experience, Dining Services Supervisor, and Quality & Compliance Consultants to ensure compliance with 42 CFR Part 483, Subpart B (Requirements for Long-Term Care Facilities), Title 22 regulations, Health Department requirements, and County Health standards. Ensures an appropriate menu cycle is developed, implemented, and adjusted as necessary to meet resident needs. Directs food preparation in accordance with production sheets, recipes, census requirements, and resident Food & Nutrition needs.
Assesses each resident's Food & Nutrition needs and develops care plans in collaboration with the RAI process and Interdisciplinary Team (IDT). Conducts resident visits, completes nutritional screenings for each resident, and participates in weekly resident care planning and case management meetings with appropriate nursing staff.
Develops, prepares, and posts SNF/ALU kitchen work schedules and cleaning schedules. Maintains standards of safety, sanitation, and cleanliness within the Culinary Department. Orders, stocks, and maintains appropriate inventory levels of Food & Nutrition supplies. Assists with special catering events and community functions. Addresses resident concerns received through the Resident Council or directly from residents. Maintains familiarity with and follows the community Disaster Plan.
Responsibilities

- Assist with special catering events and community functions.
- Maintain safety, sanitation, and cleanliness standards in the Culinary Department.
- Address resident concerns related to Food & Nutrition services.
- Assess resident Food & Nutrition needs and develop care plans in collaboration with the IDT.
- Conduct resident visits and complete nutritional screenings.
- Participate in weekly resident care planning and case management meetings.
- Develop and post kitchen work schedules and cleaning schedules.

- Maintain professional appearance and adherence to dress code and community standards.
- Follow established safety guidelines and use proper body mechanics.
Requirements
- AA degree in Food Service Management.
- Certified Dietary Manager and ServSafe certifications required.
- Minimum three to five years' experience overseeing a Skilled Nursing Food and Nutrition Department.
- Working knowledge of food service preparation principles, sanitation, and safety standards for institutional kitchens.
- Knowledge of practices to avoid waste and misuse of resources.
- Ability to present foods attractively and test quality by taste and smell.
- Knowledge of state, federal, and county health food service regulations.
- Competency in care planning regarding Food and Nutrition needs and therapeutic nutrition.
- Ability to operate all kitchen equipment and utensils safely and efficiently.
- Knowledge of quality assurance standards within a Food and Nutrition Department.
- Ability to organize, prioritize, and supervise staff amidst frequent interruptions and deadlines.
- Excellent verbal, written communication, and mathematical skills for record-keeping and ordering.
Work Conditions & Physical Requirements
Requirements are subject to possible modification to reasonably accommodate individuals with disabilities. Medium Work: Exerting up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects.
The final candidate must successfully pass Eskaton's post-offer, pre-employment testing, which includes a criminal background check, drug test, TB screen test, and health screen. All new hires are required to sign an arbitration agreement as a condition of employment.

Pay
Starting annual pay ranges from $70,304 to $85,000. Factors such as scope, responsibilities, experience, education, job-related skills, internal equity, and market considerations may influence base pay.
