Executive Sous Chef

Responsibilities

• Opens and closes the line
• Performs precise line checks and facility walks
• Ensures EcoSure compliance with proper documentation and addresses any deficiencies
• Runs high volume service periods from the expo or wheel position to ensure food quality and presentation meets TFK standards
• Works with BOH and FOH team to perform precise line checks and facility walks with proper follow‑up and documentation
• Participates in all EcoSure & Health inspections, ensuring a safe production environment
• Responsible for hiring and developing back‑of‑house employees; managing their schedules and reporting payroll hours in compliance with company standards and state laws
• Partners with EC on managing the P&L to maximize profits through food cost management, labor, inventory control and restaurant performance
• Assists in ordering and invoicing of product
• Maintains open communication with FOH team to ensure adherence to TFK guidelines

Requirements

• Strong passion for culinary excellence and exceptional attention to detail
• Resilient in stressful situations and able to handle last‑minute requests
• More than 3 years of experience as a chef in a full‑service, high‑volume restaurant
• Advanced knowledge and understanding of the financial aspects of business operations
• Caring, self‑motivated, with an aptitude for leading, coaching and driving excellence
