Executive Master Baker
About the role
The Executive Master Baker serves as the highest culinary and baking authority within LaMar’s Donuts & Coffee. This executive-level role is responsible for leading, designing, and scaling a world-class artisan baking program that sets the standard for quality, innovation, and guest experience across all company-owned and franchised locations.
Responsibilities
- Lead and oversee LaMar’s expanded gourmet baking program, including:
- Artisan breads and bagels
- Croissants and laminated pastries
- Danish, muffins, cookies, brownies, and bars
- Cupcakes, birthday cakes, wedding cakes, and special-occasion cakes
- Execute advanced piping, finishing, and fresh fruit presentation techniques
- Create and maintain a proprietary, expanded menu line authored by the Executive Master Baker
- Conduct ongoing research and development of new products, seasonal offerings, and limited-time releases
- Develop premium and luxury baked goods that justify high price points through quality and craftsmanship
- Ensure products are scalable while maintaining artisan integrity
- Design and lead orientation and training programs for all baking positions
- Establish standardized recipes, procedures, and quality controls
- Certify bakers and trainers across corporate and franchised locations
- Serve as the final authority on baked goods quality and readiness
- Set merchandising and display standards for all baked goods
- Partner with operations and leadership to optimize guest appeal and sales conversion
- Maintain consistency and excellence across multiunit operations
- Implement quality audits and corrective action plans as needed
- Balance production efficiency with premium execution standards
Qualifications
- Minimum 10 years of high-level, from-scratch baking experience
- Demonstrated expertise in artisan breads, laminated doughs, pastries, and celebration cakes
- Advanced skill in piping, finishing, and decorative techniques
- Experience training and leading bakery teams
- Strong understanding of food science, fermentation, and ingredient functionality
Prior Experience
- Experience in luxury gourmet, artisan bakery, fine dining, hotel, or flagship café environments
- Multiunit or franchised system experience
- Experience developing premium or gourmet menu lines
Compensation & Benefits
Base Salary Range (Nebraska): $65,000 to $120,000 annually, depending on experience and qualifications. Additional benefits may include: Health, dental, and vision insurance, Paid time off and paid holidays, Travel and relocation support, where applicable.
