Executive Chef
About the Role
A typical day as an Executive Chef at Park Centre involves leading culinary operations, collaborating with the Certified Dietary Manager (CDM), and ensuring high-quality food service for residents and special events.
Responsibilities
- Assist with meal service and determine the amount and type of food and supplies required for daily menus.
- Lead and collaborate with the CDM for all activities and divisional operational opportunities and problems.
- Create, plan, and execute all catered and special functions.
- Develop food purchases, production sheets, scheduling, and related materials.
- Monitor food quality and quantity, taking corrective action to maintain standards.
- Follow infection control and sanitary work practices in food handling and department maintenance.
- Control waste of resources (food, supplies, equipment, and utilities) to avoid over/under production and improper use of leftovers.
Requirements
- Minimum of five years of cooking experience in a fine dining setting.
- Culinary education preferred, or a combination of education and fine dining experience.
- Experience with menu creation, purchasing, cost control, and large function banquet production.
