About the role
Thompson Dallas is seeking an experienced Director of Food & Beverage to lead the hotel’s Food & Beverage division, including restaurants, bars, banquets, in-room dining, pool operations, and hotel amenities. As a member of the Executive Committee, this leader will have overall accountability for the division’s people, operations, financial performance, and guest experience.
Responsibilities
The Director will be responsible for leading, coaching, and developing Food & Beverage leaders and colleagues, fostering a culture of accountability, collaboration, inclusion, and continuous improvement. They will oversee recruitment, onboarding, performance management, retention, development, and succession planning across the division.
- Provide strategic and operational leadership across all Food & Beverage operations while ensuring consistent execution of Hyatt and Thompson brand standards.
- Champion service excellence across every outlet, event, and guest touchpoint.
- Drive strong standards of cleanliness, organization, safety, sanitation, product quality, inventory controls, and operational readiness.
- Maintain a visible leadership presence during high-volume periods, special events, and other critical business moments.
- Monitor guest feedback and operational performance, identifying trends and implementing actions that improve satisfaction and loyalty.
- Proactively identify operational needs, staffing challenges, and business risks and ensure timely solutions.
Requirements
- Proven Food & Beverage leadership experience within a full-service, luxury, or lifestyle hotel environment.
- Strong knowledge of restaurant, bar, banquet, and hotel Food & Beverage operations.
- Demonstrated ability to lead, coach, develop, and hold high-performing teams accountable.
- Strong financial acumen with experience managing P&L performance, forecasting, labor, costs, and profitability.
- Experience with Food & Beverage activations, special events, or revenue-generating programming preferred.
- Excellent communication, collaboration, organizational, and decision-making skills.
- Ability to balance strategic leadership with a visible, hands-on presence throughout the operation.
- Ability to work a flexible schedule, including evenings, weekends, holidays, and special events based on business needs.
