Director of Beverage - MGM National Harbor
About the role
The ideal candidate has a bachelor’s degree (preferred) and at least 4 years of experience managing employees in a similar environment, with 2+years in wine or beverage service and/or high-volume bar operations. They possess complete knowledge of health and safety regulations, beverage products, menu items, equipment, and Point of Sale (POS) systems.
Responsibilities
- Provide direction and leadership for the Beverage and Cocktails team consistent with the MGM brand.
- Lead the beverage management team in achieving the operational and financial goals of each beverage venue.
- Monitor the performance, scheduling and training of the staff.
- Maintain the facilities in accordance with MGM Resorts service standards.
- Ensure high customer satisfaction and an exceptional guest experience.
- Oversee leadership in the development and monitoring of beverage operations, fiscal budgets, guest service standards, and marketing strategies to produce both short-term and long-term profitability.
- Establish par levels for supplies, liquor, beer, wine and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
- Oversee implementation of policies, operating procedures, training programs, directives, menus, work schedules, rules and regulations for the beverage staff and personnel.
- Maintain complete knowledge of all liquor brands, beers and non-alcoholic selections available in outlets, the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
- Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage.
- Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
- Interview, select, train, supervise, counsel and coach beverage staff for the efficient operation of the outlet.
- Drive employee engagement through coaching, training, and development.

Pay
The pay range for this role is: $97,300.00 - $129,700.00 This range represents a good faith estimate of the salary range that MGM reasonably expects to pay for the position upon hire. The actual salary offer will take into account a wide range of factors, including location. This position is eligible to participate in the Company’s incentive plan. Employees in this position are eligible to participate in medical, dental, vision, life insurance, 401(k) plans, and time off plans. Specific program offerings vary by eligibility factors such as geographic location, employment status, and union membership.
