Responsibilities
- Aid in the development of all menu content
- Consistently seek opportunities to introduce, renew, and refresh offerings to delight guests with new products
- Collaborate with all Disney Cruise Line Food and Beverage lines of business to ensure open communication
- Work with food managers to uphold the highest culinary standards and crew excellence through effective leadership, motivation, empowerment, and communication
- Own all Food and Beverage collateral from inception to delivery, including managing print inventories
- Participate in succession planning and training programs for Culinary teams
- Foster teamwork among shipboard and shore teams by establishing effective partnerships
- Ensure all audits are completed promptly and regularly, including auditing of all procedures
- Coach, mentor, and advise culinary teams
- Support direct reports in defining, communicating, and achieving specific goals related to Guest Satisfaction, Crew Excellence, and operational and financial excellence and productivity
- Conduct onsite audits and lead trainings, requiring travel/sailing as needed
Requirements
- Minimum 5 years’ experience in an Executive Sous Chef role or higher
- Experience in menu development and implementation
- Experience within a la carte, banqueting, large volume operations, and Quick Service
- Strong presentation, business planning, conflict resolution, and organizational skills
- Computer proficiency within a Windows/Mac environment
- High level of cooking skills and knowledge
- High level of initiative, motivation, problem-solving skills, and continuous improvement skills
- Ability to be flexible with work schedule, including shipboard implementations and audits
Qualifications
