Troon’s Corporate office in Irvine, CA is seeking a highly motivated Corporate Task Force Food and Beverage Manager to support operations designated by the SVP of Food and Beverage. This role involves up to 90% travel.

About the Role

Assists in overseeing culinary staff, food production, scheduling, training, and maintaining quality standards. Collaborates with management to implement and uphold food and beverage service standards, ensuring excellent customer service.

Responsibilities

  • Oversees and manages food preparation for a specific kitchen area (e.g., restaurant line, banquets, shifts), ensuring consistently high-quality food.
  • Dedicates the majority of each day to management and supervisory duties.
  • Adheres to cost and quality control procedures, including food and beverage production charts, par levels, standardized recipes, and costing sheets.
  • Monitors and maintains kitchen equipment daily in collaboration with staff.
  • Maintains a quality sanitation program and implements daily food and beverage prep lists.
  • Assists with ordering food products and assigns duties to associates for efficient kitchen and bar operations.
  • Maintains and evaluates existing food and mixology concepts; assists in developing new concepts.
  • Supports the achievement of budgetary objectives for the Food and Beverage Department.
  • Processes requisitions for supplies accurately and promptly.
  • Ensures proper receiving, storage (including temperature logs), and rotation of food and beverage products to comply with health regulations.
  • Assists in interviewing, hiring, training, performance evaluations, and disciplinary actions for associates.
  • Manages department staff, including servers, bartenders, hosts, cooks, and stewards.
  • Conducts pre-shift meetings to review specials, menu changes, and upcoming functions.
  • Maintains cleanliness, organization, and stock levels in restaurant facilities.
  • Circulates through restaurant and kitchen areas to monitor and ensure food quality and service standards.
  • Greets guests to ensure customer satisfaction and oversees cash handling procedures where applicable.
  • Supervises daily restaurant activities, including serving, bussing, seating guests, and room service.
  • Collaborates with management and the Corporate Director of Food and Beverage on hiring, training, and performance evaluations.
  • Supervises proper food and beverage preparation and equipment operation; assists in developing training programs.
  • Ensures effective orientation and ongoing training for new associates, including comprehension tests.
  • Maintains regular and reliable attendance and incorporates safe work practices.

Requirements

  • Certificate from a college, technical school, or accredited facility; or three to six months of related experience and/or training; or equivalent combination of education and experience.
  • Knowledge of accepted sanitation standards and applicable health codes.
  • Ability to read and speak English (required for communicating with customers, co-workers, and equipment manuals).

Pay

$85,000–90,000 (dependent on experience).
