Responsibilities
- Prepares, seasons, and cooks soups, meats, vegetables, and other foodstuff for consumption in buffet and banquets.
- Keeps the buffet clean and free of food debris; assists with replenishing food on the buffet.
- Adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles.
- Measures and mixes ingredients according to recipes using kitchen utensils and equipment (blenders, mixers, grinders, slicers, tenderizers).
- Prepares soups, salads, gravies, desserts, sauces, and casseroles.
- Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods.
- Adds seasoning to foods during mixing or cooking, following casino guidelines.
- Observes and tests foods being cooked by tasting, smelling, and piercing with a fork to ensure proper cooking.
- Carves meats and portions food in hotel pans for buffet service.
- Washes, peels, cuts, and shreds vegetables and fruits for preparation.
- Observes guests and responds to additional requests.
- Monitors hot and cold food temperatures throughout the shift.
- Carries out tasks assigned by Sous chefs in a timely manner.
- Helps keep the working station and kitchen clean.
- Wears provided department uniform during scheduled work hours.
- Attends mandatory department, Title 31, and/or SAR trainings.
- Ensures confidentiality of financial records and employee/client records.
- Demonstrates professionalism in responding to requests, complaints, and problems.
- Represents the Fond du Lac Band of Lake Superior Chippewa positively in the community.
- Maintains proper attendance and punctuality.
- Performs other duties as assigned by management.
Requirements
- Two years of cooking experience required.
- Good knife skills and ability to work under pressure.
- Food handler’s certification required (must obtain within 3 months of hire if not certified at time of hire).
- Knowledge of cleanliness and sanitation standards for food service.
- Strong customer service skills.
- Ability to follow directions and work independently.
- Effective oral and written communication skills.
- Ability to establish professional and harmonious working relationships.
- Subject to drug and alcohol testing per Fond du Lac Reservation’s Personnel Policies.
- Subject to pre-employment and annual background checks.
Physical Requirements
- Sedentary work with frequent walking and standing.
- Exposure to inside environmental conditions, including a smoking environment.
- Frequent handwashing required to maintain hygiene.
- Ability to lift and carry up to 25 pounds.
- Bending, stooping, prolonged walking, and standing required.
Schedule
- Rotating shifts, including weekends and holidays.
Pay
$16.96 - $19.08 per hour.
