About the role
A Cook 2 will accurately and efficiently prepare, portion, cook, and present a variety of hot and/or cold food items for various meal periods in various outlets or preparation locations. Work follows outlet-specific recipes and standard operating procedures while adhering to Ocean Casino, local, state, and federal health and safety regulations.
Responsibilities
- Prepares and cooks food to order based on recipes, SOPs, and verbal instruction from the room chef, sous chef, and/or manager on duty.
- Works across service styles: à la carte, banquet/catering, and buffet.
- Delivers the highest quality of food and service to customers on Ocean Casino property and at off-site events representing Ocean Casino.
- Reads food orders and/or receives verbal instructions, then prepares, cooks, and presents food accordingly.
- Proficiently performs the duties of a Cook 3 and kitchen runner.
- Performs the following tasks with minimal to no supervision after proper training:
- Deep frying, marking/searing proteins, and other food items.
- Operating ovens and cooking equipment, setting thermostats and timers as instructed.
- Removing hot food items from kitchen equipment.
- Panning hot and/or cold food.
- Heating soups, sauces, and pre-cooked items (except intermediate-level or fast-food items like eggs, well-done burgers, chicken, vegetables, and starches).
- Transferring hot and/or cold food items between cooking and serving vessels.
- Maintains clean, sanitary, and organized workstations at all times.
- May perform other duties and responsibilities as assigned.
Essential Functions
- Continuous standing and walking for long periods.
- Pushing/pulling heavy carts, lifting products (up to 50 pounds), and placing items into storage.
- Ability to work in hot and/or cold areas within the same shift.
- Repetitive lifting, bending, and reaching.
- Adherence to Ocean Casino policies, including wearing non-slip black shoes, an Ocean hat, plain black hat, disposable toque, or sailor’s cap, kitchen uniform, and name tag.
- Additional duties outside of job responsibilities will be compensated at the appropriate hourly rate after 8 hours within a month.
Requirements
- High school diploma or equivalent preferred.
- One year of experience in a high-volume kitchen.
- Ability to communicate, read, and comprehend English.
- Intermediate skills in at least two of the following cooking methods:
- Deep frying
- Marking/searing
- Cooking proteins to well-done (e.g., burgers, chicken)
- Fast food/quick-service methods
- Intermediate skills in using at least 50% of the following kitchen equipment:
- Open flame burners
- Open flame grills
- Flat top grills
- Fryers
- Steamers
- Convection ovens
- Mixers, blenders, robot coupes, and burr mixers
- Must pass a practical cooking test with a score of 70% or higher.
