About the role

Support the Military's Quality of Life programs! The Morale, Welfare, and Recreation (MWR) department of Commander, Navy Installations Command (CNIC) provides fitness, recreation, lodging and food and beverage programs for service members, their families, retired military and civilian employees. This position is assigned to the Non-Appropriated Fund (NAF) Food and Beverage; Fleet Readiness; Commander, Navy Installations command (CNIC); NBK Bangor - Warrior Eatery.

Responsibilities

  • Supervise and coordinate activities of cooks and other facility personnel engaged in preparing, cooking and serving to ensure economical, efficient and profitable food service.
  • Take responsibility of making decisions as problems arise and establish high standards for overall operation of the restaurant.
  • Administer training for all food service workers, cooks and dish washers.
  • Prepare work schedules and work assignments; distribute workload among appropriate facility personnel.
  • Evaluate work performance; train and provide on-the-job training to subordinates.
  • Determine and maintain staffing levels; recommend, assist and, at times, execute personnel actions such as hiring and termination.
  • Control work attendance and establish leave schedules.
  • Work closely with staff to maintain open lines of communication.
  • Ensure that policies, procedures and internal controls are met.
  • Assist in estimating consumption and placing orders for food and other operating supplies through purchasing agent; may contact vendors and compare prices and quality.
  • Establish stock levels and maintain control to prevent pilferage, spoilage, waste, or misuse in food preparation and storage areas.
  • Maintain inventories of food and kitchen operating supplies as required.
  • Plan menus in consultation with Business Activity Site Manager and Regional Program Manager; assure adherence to established menus, standardize recipes and menus, and maintain quantity recipe file.
  • Supervise, direct, assist and participate in preparation and cooking of food items; prepare and cook meats, soups, vegetables, and other foods.
  • Regulate cooking temperatures, test foods in cooking, season as appropriate.
  • Prepare or direct the preparation of complex salads and desserts; decide size of food portions.
  • Instruct employees on fine points of cooking and improved food preparation and cooking methods; check methods of food preparation, cooking, and garnishing; taste and inspect food prepared by subordinates.
  • Ensure the quality of foods and variety of dishes; assure that food preparations are economical and technically correct and make the food preparation a profitable operation.
  • Inspect food returned to the kitchen to decide the extent of waste, using this information as a basis for modifying future menus or for cooking foods in a different manner; plan ways to use leftovers.
  • Oversee the day-to-day operations, including supervising and directing work, ensuring a safe and pleasurable environment for all patrons, ensuring the cleanliness and good repair of the facility, reporting any damages, mechanical or other breakage or malfunction, and reporting/correction of safety hazards.
  • Ensure that training programs are established that inform employees of the benefits of their employment and teach them to be thoroughly knowledgeable of their particular duties; provide adequate supervision to see that those duties are carried out.

  • Organize, administer and supervise established policies and operational procedures.
  • Solve problems showing sound judgment and exercise diplomacy and tact in dealing with patrons.
  • May represent the facility at various conferences, advisory group meetings, and committees with command representatives, commercial activities, and government organizations concerning present or future club operation or programs.
  • Coordinate with the Business Activity Site, Catering Manager and facility personnel regarding catering events.
  • Perform other related duties as assigned.

Requirements

  • This position is subject to background check in accordance with federal regulations.
  • This position involves work on workdays and may involve weekends and holidays, as well as rotating shifts.
  • Physical exertion is involved in standing and walking for long periods; some bending, stooping and lifting is required.
  • Position requires evenings and weekends when there are scheduled events.

Qualifications

  • Knowledge and ability to perform routine kitchen functions such as planning, basic principles, techniques, practices and coordinating operations of the kitchen.
  • Solid foundation of food and beverage experience.
  • Knowledge of the organizational structure of food, beverage and entertainment.
  • Ability to recommend corrective action as deemed necessary.
  • Skillfully apply new methods in managing food service.
  • Knowledge of the method of general cooking, preparing and serving food and beverage.
  • Ability to inspect facilities for cleanliness, sanitation and personal hygiene standards, and physical condition of the furnishings and equipment.
  • Ability to prepare pertinent records and reports.

Education

There is no minimum education requirement for this position.
