Breakfast Supervisor (Full-Time)

About the role

Use your creativity and artistic expression to supervise the breakfast service, ensuring all culinary staff duties are carried out to maintain top-notch food quality. This position offers a pathway to join the Culinary Management Team.

Follow instructions from chefs, ensure food quality, and maintain outlet standards to enhance guest satisfaction and departmental profits. Assist chefs and step into the Sous Chef role when needed.

Responsibilities

  • Supervise culinary staff during breakfast hours.
  • Prepare and cook food quickly and correctly following all required recipes.
  • Store food properly using correct rotation and dating methods.
  • Maintain sanitary standards before, during, and after service.
  • Determine food inventory and requisition items from the storeroom.
  • Set up equipment needed for preparation prior to service.
  • Maintain high quality in food production and presentation.
  • Ensure cleanliness, sanitation, and personal hygiene.
  • Set up and break down stations, including all necessary prep work.
  • Store all requisitioned food items properly.
  • Prepare food items according to recipe specifications.
  • Clean, organize, and lock coolers after work.
  • Hold pre-shift meetings to inform staff of changes, business expectations, and general hotel information.
  • Maintain the cleanliness of the work area.
  • Create specials from unused items to control food waste.
  • Train culinary students to meet hotel standards and prepare them for advancement.
  • Perform Sous Chef duties when chefs are not present.

Requirements

  • Morning and weekend availability.
  • Friendly and polite team member.
  • Ability to follow chef instructions and read micro orders.
  • Professional culinary schooling or 3 years of similar experience.
  • Knowledge of kitchen equipment and food items.
  • Experience with stocks, sauces, meat fabrication, fish filleting, etc.
  • Working knowledge of sauté, grill, fry, and poultry stations.
  • Garnishing knowledge and experience.
  • Proficiency in the English language.
  • Leadership abilities.
  • Ability to work long hours and under pressure.
  • Flexibility to work various shifts.
  • Ability to obtain local, state, or federal licenses or certifications for sanitation, liquor service, or food service.
