Responsibilities

  • Assists in the overall effective management of the catering and concessions operations.
  • Ensures total compliance with all alcohol service policies.
  • Makes sure alcohol service is fully compliant with Alcohol Service policies during events.
  • Reports any alcohol service or compliance issues to management immediately.
  • Supports the management of catered and concessions events from setup to tear-down, including managing hourly staff, culinary staff, and guests.
  • Guarantees the legal, efficient, professional, and profitable operation of the venue.
  • Generates and reviews financial reports, including projections, forecasting, revenue analysis, disbursements, capital investments, labor and product costs, wage and salary control, and P&L financial statements.
  • Resolves conflicts; mediates last-resort disputes; arbitrates and negotiates labor issues, when applicable.
  • Authors, reviews, and amends policies & procedures, as requested by the General Manager.
  • Authors and amends contracts; authorizes terms as directed by the General Manager.
  • Oversees scheduling and labor allocation.
  • Analyzes sales in relation to anticipated staffing needs and target market demographics, and determines and projects the point-of-sale-to-guest ratio.
  • Evaluates recent historical sales and purchasing data for identifying purchasing patterns and accurate cost of goods.
  • Programs and maintains the point of sale system to ensure accurate financial reporting, tracking of accountability, and commodity levels by location.
  • Directs and assists managers in preparing and attaining future goals.
  • Provides each manager with clear direction and follows up on all assignments.
  • Inspects the operation regularly to ensure that the established quality standards are maintained.
  • Prepares required reports accurately and submits them on time, following up with department heads to ensure their reporting is completed within the same guidelines.
  • Develops an effective management team.
  • Directs and assists managers in preparing and attaining future goals.
  • Provides each manager with the proper direction and follows up on all assignments.
  • Inspects the operation regularly to ensure that the established quality standards are maintained.

  • Reviews and assists in the development of menus and marketing plans with the appropriate department heads.
  • Establishes and maintains personal relationships with show managers, suppliers, vendors, and the public that projects the venue in a positive light.

Qualifications

  • Bachelor's or Master's degree in Business with a focus on a related field (e.g., Accounting).
  • At least 3-5 years of management experience in the food-related or concessions industry.
  • National Concessions Manager Certification from the National Association of Concessionaires.
  • Nationally recognized, advanced food service sanitation training course certification.
  • Ability to communicate clearly, professionally, and courteously with employees, co-workers, volunteers, management staff, and guests.
  • Solid working knowledge of computer applications: Microsoft Office, POS systems, and timekeeping systems.
  • Excellent teamwork and ability to work well in a team-oriented, fast-paced, event-driven environment.
  • Thorough understanding of all existing concessions and premium services locations, including geographical location, equipment, evacuation procedures, adjacent employee and guest areas, and facility access.
  • Valid Food Handlers certificate and Alcohol Service Permit if required by state or local government.
  • Knowledge of inventory cost control and menu planning.
  • Comprehensive understanding of all applicable sanitation requirements, food preparation guidelines, alcohol service policies, safety standards, etc., pertaining to Oak View Group and venue concession and premium services operations.
  • Ability to perform basic and complex mathematical functions (addition, subtraction, multiplication, division, percentages).
  • Accuracy in handling cash.
  • Strong ethical standards and confidentiality.
  • Ability to work independently with little direction.
