About the role
The Assistant Director - Executive Chef implements strategy for Food Service, Menu Building, Special Events, and Galley Inventory System. Responsibilities include ensuring operational adherence to contracts, managing budgets, overseeing staff training, and coordinating with various departments.
Responsibilities
- Ensures overall management and day-to-day operations follow applicable contracts.
- Maintains financial accountability for consumable supplies, food, and labor costs.
- Maintains galley manager, supervisor, and staff compliance with Goodwill policies and SOPs.
- Leads annual CNIC initiative and culinary competitive events.
- Develops strategies for improving data input integrity in the galley inventory system.
- Analyzes galley inventory reporting requirements for food cost analysis and trend analysis.
- Coordinates with the Marketing/Special Events manager and Procurement team for special event menu inventory.
- Manages and trains the Special Events staff on special menu requirements and processes.
- Serves as the Point of Contact for key food service operational data and analysis.
- Coordinates with the Navy Customer on special guest events and notifies the RTC Galley management team.
Requirements
- Associates Degree in culinary arts.
- Certified Executive Chef (CEC) certification within 24 months, company-paid.
- A REAL ID-compliant driver's license required for access to the naval base.
- Thorough knowledge of large food service operations, including procurement, galley inventory, and customer requirements.
- Proficiency in writing with explicit attention to detail.
- Strong working knowledge of Microsoft Office software, particularly Word, PowerPoint, Excel, and galley inventory software.
- Leadership competencies including business insight, courage, customer focus, values differences, communicates effectively, situational adaptability, drives results, ensures accountability, and physical/sensory demands.
