Responsibilities
- Maintain accurate and complete documentation of all processes
- Ensure that the required cook times and temperatures are followed
- Assist in positioning the product into the retort and removing it when the cooking process is complete
- Complete all preventative maintenance
- Maintain proper housekeeping
- Mara, bleach, glace, and syrup tank processing
- Monitor and maintain brine and SO2 levels
- Monitor and maintain fruit and syrup brix levels
- Monitor and maintain PH levels
