A Twin Peaks Heart of House Line Cook prepares best-in-class food for every guest, upholding extreme standards of food quality, sanitation, and safety.

Responsibilities

• Adhere to uniform standards
• Follow prep and line build recipes
• Check quality of ingredients
• Maintain clean and organized stations and equipment
• Ensure Heart of House Standards, Safety, and Sanitation requirements are followed at all times
• Work as a team
• Train using tablets or computers
• Perform any other duty or responsibility assigned by management

Requirements

• Proven experience as a Line Cook
• Ability to communicate in English
• Must understand prep recipes and line build procedures
• Ability to apply common sense and understanding to carry out simple one- or two-step instructions
• Ability to handle standardized situations with only occasional or no variables
• Must attend orientation and agree to policies and procedures outlined in Twin Peaks HOH training
• Must complete the HOH training program prior to working a shift without supervision
• Must complete any other required training, including food and/or alcohol service certifications as mandated by local and state regulations

Physical Demands

• Regularly required to stand, walk, use hands and fingers to handle or carry objects, and talk or hear
• Must reach with hands and arms
• Must occasionally lift and/or move up to 15 pounds
• Requires close vision, peripheral vision, depth perception, and the ability to focus

Work Environment

• Regularly exposed to fumes or airborne particles from the kitchen
• Occasionally exposed to wet and/or humid conditions (e.g., dish area or walk-in cooler)
• May be exposed to toxic or caustic chemicals when cleaning
• May be exposed to cigarette or cigar smoke in locations with guest smoking sections

Uniform Requirements

• Clean Twin Peaks black hat worn facing forward at all times (brim never bent)
• Hair must be kept clean and fully underneath the TP hat
• Must be clean shaven; beards and mustaches allowed but must be maintained
• Fingernails must be kept trimmed
• No jewelry allowed in ears, face, around the neck, or on wrists
• No headphones or earbuds
• Clean, non-faded, wrinkle-free Twin Peaks kitchen shirt tucked in
