Traveling Food Service Director
Wage Rate: $75,000/year
About the Role
Traveling Food Service Director will plan, direct, and coordinate the activities associated with running and assisting food service operations in multiple sites. Responsible for stepping into facilities within an assigned region which need support with supervision, preparing meals and/or other tasks as assigned based on the clients/business needs. This position is in charge of the operational and financial responsibilities for the kitchen while assigned to a designated location.
Supervises an Assistant Food Service Director (AFSD) and/or a team of Food Service Supervisors and/or Cooks involved with the preparation, serving, and clean-up of food in a secure correctional facility. Prior to deployment to any facility, a complete briefing by the Regional Food Service District Manager or designee on the status of the facility and support needs will be reviewed.

Responsibilities
- Supervise, train, and instruct team members and/or inmates in general food service practices, including the preparation, cooking, and serving of food.
- Oversee that appropriate quantities of food are prepared and served according to facility or site plan.
- Hire, orient, train, and issue corrective action (when applicable) to team members.
- Review and approve payroll on a bi-weekly basis.
- Coordinate the workflow and assign work to team members.
- Ensure all team members are adequately trained and capable of performing job responsibilities safely.
- Direct team members to ensure job-related rules, policies, procedures, and security guidelines are enforced.
- Responsible for maintaining accuracy of inventory in advance preparation of planned menu schedule.
- Ensure ordering and all required reports are completed accurately and on time.
- Know and comply with client’s contractual obligations.
- Ensure food items are stored in a safe and hazard-free manner.
- Plan for special events and functions through participation in meetings with assigned customer facility operations staff.
- Maintain product service quality standards.
- Maintain a sanitary environment following food service and Health Department codes and regulations.
- Maintain accurate on-site reports of daily and monthly financial, production, and activity.
- Responsible for any state or other inspection of food service operation.
- May participate in the contract negotiation and renewal process.
- Ability to travel up to 100% of the time from your home base account including overnight stays at hotels when needed.
- May perform other duties as assigned.
Requirements
- High School Diploma or Equivalent, and you must be at least 18 years of age.
- Three years of management or supervisory experience in a food service environment.
- Valid Driver License.
- Ability to travel up to 100% of the time from your home base account including overnight stays at hotels when needed.
- Knowledge and experience managing and applying kitchen sanitation and safety standards and methods.
- Knowledge of basic accounting and mathematical abilities to complete necessary reports.
- Five years of management or supervisory experience in a food service environment.
- ServSafe Food Manager’s Certification Required.
- Establishing a course of action for self and/or others to accomplish specific goals by planning proper assignments of personnel and appropriate allocation of resources.
