Job Details
The Jonathan Club is seeking a Sushi Chef to join their team. This position will work closely with the Town Club Chef de Cuisine and Executive Chef to manage the sushi line, ensuring quality, cost standards, and member satisfaction.
Responsibilities
- Maintain financials for sushi line purchases and sales with the Town Club Chef de Cuisine and Executive Chef
- Maintain food safety programs specific for sushi operations in accordance with Los Angeles County and Jonathan Club health codes
- Create and break down menus, and cost all menu items for the sushi line with the Town Club Chef de Cuisine and Executive Chef
- Assist with sushi needs for both the Beach Club and Town Club as needed
- Communicate clearly and effectively to provide direction to the team
- Maintain all equipment in proper condition and document monthly on the Jonathan Club Monthly Self Checklist
- Ensure high levels of member satisfaction, quality, and operating costs
- Monitor the performance of the sushi kitchen team and ensure procedures are completed on time
- Identify the developmental needs of the sushi culinary team and provide mentoring to improve their skills
- Set an example for following kitchen guidelines on all matters
Requirements
- Minimum 3 years of experience in cooking in a well-established sushi bar or Japanese restaurant
- Culinary Certificate or Degree preferred
- Able to lift up to 50 pounds
- Able to perform tasks requiring bending, reaching, stooping, and stretching
Pay
$80,000/year - $90,000/year
