Patton State Hospital, Human Resources Department, is seeking a Permanent, Full-Time Supervising Cook I for the Nutrition Services Department under the direction of the Food Manager.
Responsibilities
- Supervise patient meal preparation, allocation, distribution, and adherence to HACCP (Hazard Analysis and Critical Control Point) plan.
- Deliver instruction and training to employees, evaluate their performance, and take or recommend appropriate action.
- Supervise the maintenance of culinary utensils and equipment and the cleaning of various storage and work areas.
- Conduct inspections and maintain safe food handling practices and standards of safety and sanitation.
- Order, requisition, receive, inspect, store, and inventory supplies.
- Supervise garbage disposal.
- Determine the amount of food to be prepared as required.
- Keep records and prepare reports.
- Plan palatable and adequate menus.
- Plan, organize, and direct the work of others.
- Direct the preparation of various diets (e.g., allergy, therapeutic, religious, medical) to ensure proper receipt and service of designated food items to patients.
- Plan food production to schedule and organize large food production according to standardized menus to ensure timely and cost-effective meal preparation and service.
- Plan and conduct in-service training programs.
- Analyze situations accurately and take effective action.
- Effectively contribute to the department’s affirmative action objectives.
Requirements
- Ability to safely lift at least 50 pounds to accomplish day-to-day activities, duties, and responsibilities.
- Knowledge of operating kitchen and cooking equipment (e.g., mixers, steamers, ovens) used in the care, preparation, cooking, and dispensing of food in large quantities.
- Knowledge of advanced food handling sanitation (e.g., HACCP) procedures to prevent foodborne illness and cross-contamination.
- Knowledge of principles of effective supervision.
- Knowledge of food accounting and use of purchase orders for food and equipment.
- Knowledge of training methods.
- Knowledge of the department’s Equal Employment Opportunity Program (EEOP) objectives to provide a safe and healthy workplace and comply with laws, rules, and regulations.
Pay
$4,726.00 - $5,811.00 per month. New to State candidates will be hired into the minimum salary of the classification or minimum of alternate range when applicable.
Schedule
Permanent, Full Time. Work location: San Bernardino County (in office).
