Subway & Retail Assistant Manager
Full-time role (40 hours per week) reporting to the Subway, Retail & Marketing Manager.

About the Role
Edge Hill Students’ Union operates a retail and catering offer, including a Subway franchise, clothing store, online shop, pop-up stalls, and promotional activations across campus. The Assistant Manager will play a key role in delivering an exceptional customer experience across these operations, taking the lead on the day-to-day management of the Subway outlet while supporting the wider Retail Department. The role is responsible for ensuring Subway brand standards, food safety compliance, operational efficiency, and commercial performance are consistently achieved. Alongside leading the Subway operation, the Assistant Manager will provide support across other retail activities and contribute to the ongoing development of the Students’ Union’s commercial services. Whilst the role includes responsibilities across the wider Retail Department, the majority of working time will be dedicated to the management, operation, and development of the Subway outlet.
Responsibilities
- Leadership
- Manage with integrity, honesty and knowledge to promote the culture, values and mission
- Take the lead on the in-store day-to-day Subway operations and support the wider retail operations
- Provide coaching and guidance to the team, ensuring operational goals are achieved
- Work alongside the Subway, Retail & Marketing Manager, following the strategic plan and taking the lead in the absence of the manager
- Managing Operations & Measuring Results
- Communicate clearly, concisely, accurately and professionally at all times
- Constantly monitor and manage staffing levels to ensure sales are driven forward and maximised, and to ensure partner development and talent
- Maintain efficient ordering methods to ensure the availability of required menu items and a proper balance of goods in inventory both in Subway and Retail
- Regularly inspect equipment and fixtures, inside and outside the store, to ensure they are in proper working order and good condition
- Ensure pop-up stalls and media activations are run and completed to the correct specification
- Develop and manage marketing campaigns and fairs
- Executing Functional Responsibilities
- Utilise management information tools and analyse paperwork as requested to identify and address trends and issues in both Subway & Retail
- Use all operational tools to plan for and achieve operational excellence in both Subway & Retail
- Ensure adherence to Subway® brand compliance standards with a focus on standards relating to food safety
- Team Member Development/Team Building
- Provide staff with coaching, feedback and development opportunities to build effective teams by:
- Challenging and inspiring staff members to achieve business results
- Ensuring staff members adhere to all NUS, Edge Hill Students’ Union & Subway® operational standards
- Developing and maintaining positive relationships with the Subway & Retail team
- Utilising and demonstrating effective management policies and procedures
- Maintaining business records as outlined in the Operations Manual and analysing business records to manage the business
- Communicating changes of food preparation formulas, standards, etc. to the team
- Supporting local and national marketing initiatives
- Ensuring that all local and national health and food safety codes are maintained, and that company safety and security policies are followed
- Recruiting new staff members
- Recognising and rewarding staff performance
- Taking disciplinary action as required
