Responsibilities
- Follows policies and manuals for implementation in the field, ensuring compliance and consistency across the group
- Direct and assist Stewards to make clean up more efficient
- Support all outlets by transporting and ensuring adequate stock
- Work closely alongside the Executive Steward to control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control
- Assist with the planning, organization, and execution of the quarterly inventory count
- Assist with accurate tabulation of all breakage and propose the purchase of all operating equipment
- Control quality of washing equipment, chinaware, glassware, flatware, and supervise burnishing of silverware, kitchen cleaning, and garbage disposal
- Ensure proper cleaning agents, processes, and conduct technical job knowledge training
- Assist in controlling Food & Beverage divisional expenses by educating outlets on proper chemical usage, equipment handling, breakage costs, and safety issues
- Review staffing levels to ensure operational needs and financial objectives are met
- Ensure appropriate standards are adhered to, following established procedures and checklists
- Ensure all stewarding paperwork is completed accurately and on a timely basis, including daily sheets, purchase orders, accounts payable, bank deposits, and employment-related forms
- Provide guidance and direction to subordinates, including setting performance standards and monitoring performance
- Assist in the preparation of the department cost control plans
- Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards
- Maintain a clean and safe work area
Qualifications
- Bachelor's Degree in Hospitality Management or other related fields
- Three years in ultra-luxury restaurant operations, preferably in a union environment
- Computer literate and proficient in Micros, Infogenesis, and Microsoft Office
- Strong command of both spoken and written English, with fluency in other languages preferred
- Excellent interpersonal relationship with a positive attitude and ability to work cohesively as part of a team
- Ability to exert physical effort in transporting 20 pounds, endure various physical movements throughout work areas, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and co-workers
