Smokehouse Operator 1st Shift

About the role

Sets up smoke area and stage products in accordance with needs or priorities while ensuring proper smoke and curing procedures and temperatures are followed. Completes required paperwork, visually inspects products for flaws, and ensures products meet established quality levels before release. Follows all USDA, SQF, and Wenger Group HACCP requirements while maintaining safety rules and a flexible schedule.

Responsibilities

• Monitor smokehouses to ensure products are cooked to company specifications.
• Monitor chilling of products to comply with company specifications.
• Load and unload smokehouses and brine chillers.
• Accurately record and document weight sheets and charts.
• Inspect smokehouse rooms hourly for Standard Sanitary Operating Procedures (SSOP) deficiencies.
• Transport racks of product to and from the smokehouse floor.
• Consume products into SAP.
• Load and unload carts of raw product into smokehouses.
• Lift, push, and pull 50+ lbs.
• Follow proper ready-to-eat procedures.
• Stage product in packaging and ham steak coolers.
• Maintain general housekeeping.
• Assist with production as required.
• Report detected inconsistencies to supervisors, quality assurance personnel, or managers.
• Check for condensation before moving product.

Requirements

• Able to stand extreme temperature changes from hot to cold.
• Must be able to read and write in English.
• Basic math skills.
• Able to work independently.
• Able to push and pull continuously heavy loads of product (up to 1500 lbs, assisted by a rail system).
• Able to understand and follow oral and written instructions from supervisors and designated staff.
• General knowledge of smokehouse operation.
