About the role
The Senior Cook at Caltech is responsible for preparing and cooking a wide range of food items, managing inventory, and ensuring compliance with safety and sanitation standards. This role requires a combination of culinary expertise and strong organizational skills.
Responsibilities
- Prepare and cook standard or specialty food items, including meats, fish, vegetables, and bakery products.
- Cook from scratch or make substitutions as requested, following recipes or member orders.
- Develop menus and coordinate ordering process to ensure adequate supplies are on hand.
- Clean and sanitize work areas and equipment according to protocol; deep-clean equipment and work areas per schedule.
- Serve as a liaison between kitchen and dining facility, coordinating food preparation and service during peak periods.
- Oversee à la carte service from the kitchen, including special and private events.
- Train new cooks and kitchen staff, ensuring adherence to recipes and menu guidelines.
- Ensure proper food handling and cost control.
- Perform other related duties as required or assigned.
Requirements
- Culinary certificate and a minimum of 4 years of experience in a dine-in a la carte restaurant or six years of relevant experience in a busy a la carte dining facility.
- Ability to follow and maintain maximum standards of ServSafe sanitation and safety to ensure the highest standards for food and beverage service.
- Ability to carry a minimum of 50 pounds of cooking utensils, cooking pots, cooking supplies, and cooking ingredients repetitively throughout the day.
- Must be able to read, write, and follow instructions in English.
- Ability to perform basic mathematics: addition, subtraction, multiplication, division, and percentage conversion to decimals and count, as related to calculating or converting units of measure for determining proper amounts of food ingredients for large food production.
Qualifications
- Culinary degree preferred, but not required.
- Experience in a high-end dining facility preferred.
