Christian Park Healthcare Center provides oversight of the operation of the Dietary Department, including staffing, food ordering and preparation, food delivery, and clean-up in accordance with facility policies, physician orders, resident care plans, and appropriate regulations and clinical assessments to ensure nutritional needs are met.

Responsibilities

  • Oversees the dietary department and provides supervision to dietary staff to ensure the nutritional needs of residents are met according to standards of practice and regulatory guidelines.
  • Carries out supervisory responsibilities in accordance with organizational policies and applicable laws.
  • Participates in regularly scheduled conferences, including department head meetings, Resident at Risk meetings, and interdisciplinary care plan meetings.
  • Oversees the purchase of food and supplies within budget and maintains adequate supply for each meal.
  • Provides technical guidance and administrative direction over diet planning, menu formulation, preparation, and service of regular and therapeutic diets.
  • Ensures menus meet resident nutritional needs, preferences, and follow physician orders and regulatory guidelines.
  • Interviews residents or family members to obtain diet history and maintains records of food likes and dislikes.
  • Confirms that charted nutritional progress notes are informative and descriptive of services provided and resident responses.
  • Visits residents periodically to evaluate meal quality, likes, and dislikes.
  • For Registered Dietitians with one location: completes nutritional portions of MDS, CAA, Resident Care Planning, and Progress Notes, as well as Nutritional Assessment, Nutritional Data Card, Diet Card, and other requirements per facility policy.
  • For Registered Dietitians with multiple locations: responsibilities may vary.
  • Monitors weekly and monthly weights and collaborates with nursing personnel to make appropriate recommendations.
  • Ensures meals are nutritious, well-prepared, palatable, timely, and consistent while adhering to menus and diet orders.
  • Verifies appropriate meals/snacks are served to residents with special dietary needs.
  • Monitors food production, ensuring use of standardized recipes and proper preparation and storage of food and supplies.
  • Monitors tray line and meal service to ensure quality and timeliness.
  • Ensures adequate food and supplies for disaster preparedness as required by regulations.
  • Assists in creating job assignments and setting priorities.
  • Ensures compliance with facilities policies and state/federal regulations regarding sanitation and safe food handling.
  • Conducts monthly sanitation rounds of the kitchen and related areas to ensure regulatory compliance.
  • Assists with developing plans of correction following State, Federal, and QA surveys.
  • Maintains records, manages budget, and monitors supplies.
  • Ensures equipment and work areas are clean, safe, and orderly; adheres to procedures for hazardous materials and infection control.
  • Monitors food preparation and storage areas to ensure health and sanitation regulations are met.
  • Reviews resident diet information and care plans, discussing changes with residents, families, and nursing staff as needed.
  • Creates and implements procedures for safe operation of department equipment by trained personnel.
  • Participates in Quality Assurance and Performance Improvement initiatives.
  • Performs other duties as assigned.

Qualifications

  • Bachelor’s Degree in Dietetics, Nutrition, or related field required.
  • Minimum of one (1) year experience as a Dietitian in a healthcare or skilled nursing setting preferred.
  • One (1) to two (2) years management/supervisory experience preferred.
  • Knowledge of MDS, care planning, and clinical documentation standards.
  • Knowledge of applicable federal and state regulations governing dietary and nutritional services.
  • Current registration with the Commission on Dietetic Registration (CDR) required.
  • Must meet state licensure requirements for a Dietitian (if applicable).
  • ServSafe Certification or ability to obtain within 90 days of employment.
  • Computer skills required.
  • Must meet all state and federal criminal background check requirements.
