Prep Cook Full Time
Processes raw food items for use in recipe production. Assists with preparation and/or presentation of menu items in accordance with established recipes and production guidelines. Supports utility work as directed by the Chef. Maintains strict sanitation of work area, including equipment, floors, and walls.
Responsibilities
- Process raw food products for use in recipe production according to production sheets.
- Report repair and maintenance needs to the Production Manager.
- Assist in washing and restocking china, glassware, and silverware as needed.
- Support production of menu items for independent living and health services.
- Maintain high standards of quality in food preparation, portion control, and serving.
- Ensure proper food storage by sealing, labeling, and dating items before refrigeration or freezing.
- Follow menus and procedures; make changes only in consultation with the Chef or Director of Dining Services.
- Keep knives and utensils clean, sanitized, and properly stored; hold in sanitizing solution when at a workstation.
- Maintain wiping cloths free of food debris and visible soil; store in chemical sanitizer solution between uses.
- Uphold sanitation and safety standards in the food preparation area and equipment.
- Handle and prepare food in accordance with departmental and regulatory guidelines.
- Conduct daily inspections of work area to ensure sanitation and safe working conditions.
- Wash and clean utensils and equipment used in production.
- Attend all required meetings, training, and in-services.
- Perform additional duties as assigned.
Requirements
- High School diploma or equivalent preferred.
- Basic knowledge of general kitchen and ingredient offerings to perform entry-level duties.
- Knowledge of food production, preparation techniques, sanitation, and storage.
- Understanding of Health Department Regulations related to food storage, preparation, and services in a commercial kitchen and CCRC.
- Ability to use and maintain kitchen equipment.
- Proficient in reading, writing, and communicating in English.
- Strong ability to taste and smell.
- Ability to work in a fast-paced environment with multiple tasks.
Physical Requirements and Working Conditions
- Ability to lift up to 50 lbs.
- Extensive walking, bending, stooping, standing, pulling, pushing, and carrying.
- Exposure to heat and cold.
- Required to work weekends, evenings, holidays, and during inclement weather.
- Exposure to sights, sounds, and smells typical of a healthcare environment, including interacting with persons having dementia.

Schedule
Full-time position with varying days of work. Shift: 11:30 AM to 8:00 PM.
