Job Summary

Responsible for following menu specifications and standard recipes by safely preparing food items for direct consumption by guests.

Responsibilities

  • Provides medium complexity hot and cold food preparation, including accompaniments and garnishes in accordance with established recipes and guidelines.
  • Maintains comprehensive knowledge of advanced food preparation and handling techniques.
  • Maintains knowledge of all kitchen equipment operations, including tear down, cleaning, and maintenance. Will be required to wash dishes/pots/pans/etc. sweep/mop, take out trash, and breakdown boxes as needed – list not all inclusive.
  • Maintains extensive knowledge of safety and sanitation rules and practices.
  • Prepares appetizers, entrees, salads, and desserts following provided recipes for restaurant, bar, and special functions.
  • Prepare and execute menu items for the restaurant in a timely manner.
  • Follows recipes, portion controls, and presentation specifications.
  • Visually inspects all food sent from kitchen and ensures plates are clean and appetizing.
  • Completes food temperature checks daily.
  • Tastes all food items prepared for quality assurance.
  • Completes preparation records and stores food items properly at close of meal service.
  • Follows all safety and sanitation rules and practices.
  • Maintain clean, safe, and sanitary work areas, follow all food safety standards.
  • Work with front of the house to meet pacing and special guest requests (including allergies and intolerances).
  • Ensures all food preparation and assembling is done in accordance with established procedures and recipes.
  • Demonstrates knowledge of fire and departmental safety procedures.
  • Takes necessary precautions and follows correct procedures for lifting, equipment operation and knife usage.
  • Performs other related duties as assigned.

Qualifications

  • High school diploma or equivalent.
  • One (1) year related experience.
  • Other combinations of education and experience may be considered.
  • Must obtain and maintain ServSafe certificate.
  • Must obtain and maintain a valid racing license.

Physical Requirements & Working Conditions

  • The Team Member will be required to stand for the duration of the shift.
  • While performing the duties of this job, the Team Member is frequently required to sit or stand; walk; use hands to finger reach, handle, or feel objects, tools, or controls; reach with hands and arms; climb or balance; bend, stoop, kneel, crouch, or crawl; and talk or hear.
  • The Team Member may be required to lift up to 50 pounds.
  • Ability to work standing 100% of the time.
  • The Team Member is subject to endure heat and moisture in a kitchen setting.
  • The Team Member may be required to work long hours, including nights, weekends, and holidays.
  • The noise level in the work environment is usually moderate to loud.
  • The work environment may vary in levels of crowds, noise, and exposure to secondhand smoke, depending on the assigned station and guest volume at the property.
