Pizza Chef de Partie
Missions
The Pizza Chef de Partie oversees the pizza station, focuses on crafting artisanal, high quality pizzas with premium ingredients, ensuring consistency and exceptional presentation for Hotel luxury standards. This role collaborates with the culinary team to deliver exceptional dining experiences while maintaining efficiency, hygiene and creativity in a fast paced and luxury environment.
Profile
- Prepare and cook artisanal pizzas, including dough, sauces and toppings to meet luxury culinary standards.
- Ensure precise execution of pizza recipes, from dough fermentation to baking, focusing on flavor, presentation and consistency.
- Ensure an efficient service, ensuring all ingredients and equipment are ready for high volume service.
- Create visually appealing pizzas with meticulous attention to ingredient placement, crust texture and presentation.
- Maintain and operate pizza ovens and related equipment, ensuring optimal performance and temperature control.
- Keep the station clean, organized and compliant with health and safety standards during high volume service periods.
- Oversee the daily operations of your kitchen section, including inventory and equipment maintenance.
- Foster a positive and collaborative work environment within the kitchen team.
- Monitor and manage inventory for your station, including ingredients, supplies and portion control to minimize waste.
- Assist in ordering supplies and ensuring stock rotation to maintain freshness.
- Collaborate with Executive Chef and Sous Chef to develop special and gourmet pizzas that align with luxury dining trends and our guest preferences.
- Stay up to date on culinary trends, techniques and ingredients to bring innovation in the menu.
- Accommodate special guest requests such as dietary restrictions or custom-made pizzas while maintaining quality.
- Adhere to strict food safety and sanitation regulations, including HACCP and local codes.
- Maintain a clean and safe kitchen environment, including regular cleaning of equipment and workspaces.
- Work closely with front of the house hoteliers to ensure seamless communication and service delivery.
- Address guest feedback or complaints related to food quality in a professional manner, coordinating with management as needed.
- Occasionally interact with guests during special events, maintaining a courteous and discreet service, polished and professional demeanor at all times.
- Ensure that personal appearance and hygiene standards are an example for the team and reflect a professional image for our guests.
- Inspire an elevated level of creativity, personal commitment to service excellence and an emotional sense of gracious hospitality to enhance the restaurant’s luxury ambience.
What you bring
- Minimum 3 years of professional cooking experience, with at least 1-2 years specializing in pizza preparation, preferably in a luxury hotel, fine dining or upscale pizzeria.
- Culinary school degree from a reputable preferred, or equivalent experience. Certifications in food safety are a plus.
- Full Time position
- Ability to work flexible hours, including days, evenings, overnights, weekends, and holidays.
- Passionate for crafting authentic, high-quality pizzas that elevates the guest dining experience.
- Self-motivated, decisive, responsible, and driven to achieve goals.
- Strong knowledge of pizza styles, ingredients, flavor profiles, and modern culinary trends.
- Fluent in English; other languages considered an asset.
- Must be able to reach, bend, balance and transport various objects weighing up to 50 lbs. repeatedly during a shift.
- Candidates must be legally authorized to work in the United States on a full-time basis at the time of application. Visa sponsorship is not available for the position.
