Responsibilities

- Ensure bread production adheres to recipe specifications, ingredient/product freshness, and quality standards.
- Produce consistent, high-quality baked goods while adhering to recipes and production schedules.
- Demonstrate world-class customer service and urgency in serving every customer.
- Assist the pastry manager and team in bakery production, following La Farm’s systems, policies, and procedures.
- Check production schedules to determine variety and quantity of goods to bake.
- Follow La Farm’s pastry scaling, mixing, dividing, proofing, shaping, and baking systems.
- Mix and bake ingredients according to recipes to produce pastries and baked goods.
- Perform daily shift roles, including combining ingredients, rolling/shaping dough, and operating equipment.
- Complete checklists and cleaning tasks to maintain sanitation and safety standards.
- Assist with next-day set-up, proper rotation, and inventory management (dry goods, cooler, freezer).
- Operate baking equipment, setting time, temperature, and speed controls.
- Monitor and control inventory levels, ensuring proper ordering of supplies.
- Inspect products for quality, identifying damaged or expired goods.
- Maintain grade “A” or better health and sanitation standards.
- Uphold company standards for opening/closing procedures and ensure safe working conditions.
- Perform other duties as assigned to support bakery operations.
Requirements
- 2-3 years of professional culinary experience baking pastries.
- Strong production skills, including technique, consistency, and accuracy.
- Demonstrated creative thinking and problem-solving abilities.
- Exceptional customer service skills.
- Familiarity with baking equipment (machine mixer, divider, moulder, 5-tier oven).
- Understanding of dough and bread fermentation processes, including necessary adjustments.
- Proficiency in scaling dough, mixing, shaping large volumes, and proper oven management.
- Analytical ability and math proficiency for production scheduling and daily operations.
- Strong relationship-building skills and a positive, team-oriented demeanor.
- Ability to work in a fast-paced environment, multitask, and meet deadlines.
- Flexibility to work weekends, holidays, and non-consecutive days off.
- Desire to experiment and create new products.
Physical Demands
- Ability to bend and lift up to 50 lbs.
