About the Role

Hotel Emma is seeking a passionate, service-driven Pastry Supervisor to supervise and coordinate activities of cooks and workers engaged in pastry preparation, ensuring sanitation and food standards are achieved. This role oversees all pastry food preparation areas in a high-end hotel environment.

Responsibilities

  • Set up personal station and mise en place according to Executive Chef specifications and recipes.
  • Properly store all mise en place and submit production needs for the following day by shift end.
  • Work all line stations as required, including closing shift duties with late-night responsibilities.
  • Develop and assist with training pastry staff, including interns/externs, to standard performance levels.
  • Ensure safe, clean, and healthy work conditions for all personnel.
  • Communicate with the pastry chef to ensure proper service according to the assigned shift.
  • Report to work on time, neatly groomed, and in a professional manner, adhering to all Hotel Emma policies and procedures.
  • Coordinate pastry cooks to achieve assigned tasks according to Hotel Emma kitchen standards.
  • Maintain cleanliness guidelines for all kitchen production, walk-ins, and storage areas with the pastry team.
  • Communicate and report mechanical problems to the pastry chef or sous chef.
  • Discuss guest comments or complaints with the chef on duty.
  • Assist in daily inventory of produce cooler and dry storage areas.
  • Follow Hotel Emma fire, safety, and health procedures, and ensure knowledge of all food safety and health inspection criteria.
  • Complete tasks and projects assigned by the chef and assist others as business volumes and staffing levels demand.
  • Ensure diligent and economic use of labor and product; disposal of food must be approved by the chef on duty.
  • Check daily the quality and level of line station mise en place.
  • Perform other related duties as necessary.

Requirements

  • Three years of experience in a high-end restaurant or hotel establishment.
  • Willingness to work flexible shifts, including nights, weekends, and holidays.
  • Attention to detail and ability to work as part of a team.
  • Passion for the pastry industry, with a general interest in house-made baked goods, plated desserts, jams and preserves, cake decoration, sugar work, ice cream, and sorbets.
  • Effective communication skills and ability to present oneself professionally, emulating the Hotel Emma culture.
  • Three to six months of related experience and/or training.
  • Familiarity with all areas of food safety and health inspection criteria.
