About the role
The Overnight Steward is responsible for restoring and preparing the restaurant's kitchen and back-of-house facilities for the following day's operations. Working after service, this position performs deep cleaning, sanitization, equipment maintenance, and organization to ensure the restaurant opens each day in pristine condition.
The ideal candidate is self-motivated, detail-oriented, and committed to maintaining the highest standards of cleanliness, sanitation, and safety expected in a fine dining restaurant.
Essential Duties & Responsibilities
- Operate commercial dishwashing equipment to clean and sanitize all dishes, cookware, utensils, and service equipment remaining after service.
- Perform deep cleaning of all kitchen stations, cooking equipment, refrigeration units, shelving, storage areas, and work surfaces.
- Clean ovens, grills, ranges, fryers, flat tops, hoods, and other kitchen equipment according to established cleaning schedules.
- Sweep, scrub, sanitize, and mop all kitchen and back-of-house floors.
- Clean floor drains, walls, mats, baseboards, and hard-to-reach areas.
- Empty trash, recycling, and grease containers following company procedures.
- Organize storage areas, walk-in refrigerators, freezers, and stewarding stations.
- Restock clean china, glassware, flatware, cookware, and kitchen equipment for the morning shift.
- Report equipment malfunctions, maintenance concerns, or safety hazards to management.
- Follow all food safety, sanitation, and workplace safety regulations.
- Secure cleaning equipment and ensure all stewarding areas are organized before the end of the shift.
- Perform additional cleaning projects as assigned.
Qualifications
- Previous stewarding, dishwashing, janitorial, or restaurant experience preferred.
- Ability to work independently with minimal supervision.
- Strong attention to detail and commitment to cleanliness.
- Ability to manage time effectively and complete overnight cleaning assignments.
- Reliable attendance and punctuality.
- Availability to work overnight, weekends, holidays, and extended shifts as business needs require.
Physical Requirements
- Ability to stand and walk for extended periods.
- Frequently lift, carry, push, and pull up to 50 pounds.
- Ability to bend, climb, kneel, stoop, and perform repetitive cleaning tasks.
- Comfortable working around commercial cleaning equipment, chemicals, hot water, and kitchen equipment.
