About the role
The Overnight Steward works through the night on deep kitchen cleaning, polishing, sanitation, and organization. This position is responsible for deep cleaning of the ovens, detailing and polishing of the brass and range, power-washing of the floor, cleaning, consolidating, and organizing non-food areas. The overnight porter will assist with breakdown of the kitchen alongside the cooks.
Responsibilities
- Deep cleaning and sanitation of kitchen.
- Cleaning of ovens.
- Scrubbing of burners and grill.
- Detailed polishing of brass areas and copper equipment weekly.
- Buffing of countertops as directed.
- Power washing and deep scrubbing of floor areas.
- Scrubbing and cleaning of cubbies, dark corners, walls, and other spaces as directed.
- Dusting lights and sconces.
- Assisting with polishing of hood in absence of maintenance tech.
- Consolidation and organization of non-food storage spaces.
- Assisting cooks with break down and stewards with pot sink at beginning of shift.
- Additional organization and deep cleaning tasks as directed by culinary managers.
- Other duties, as assigned.
Requirements
- A strong work ethic.
- Independently motivated.
- Understanding of proper sanitation and usage of cleaning supplies appropriately.
- Eye for detail and motivation to maintain all back of house spaces to the standard held by the establishment.
- Ability to work weekends.
- A reliable mode of transportation to and from work.
Qualifications
- Experience in restaurant work and/or sanitation (desirable).
- Bilingual in English and Spanish (desirable).
Skills
- An eye for organization and detailed cleaning.
- The ability to be self-motivated and take direction as given by management.
- Strong communication skills and work ethic.
- Following guidance and direction effectively, efficiently, and appropriately.

Physical Demands
- Ability to lift 50 lbs.
- Ability to stand for long periods of time (8-10 hours consistently).
- Requires exposure to hot pans, sharp knives, open flames, and temperatures ranging from hot to cold.
- Availability and understanding that the position often requires hours more than a standard workweek (40-50 hours).
