About the Role

This position involves further processing raw product into cooked product. You will work in a physically demanding environment with varying temperatures and moisture levels.

Responsibilities

  • Stand for up to 10 hours per day, lifting 30-70 pounds and pushing racks weighing up to 1200 pounds.
  • Perform physical tasks including lifting, bending, pivoting, twisting, and turning.
  • Operate and adjust machinery, including smokehouses numbered 1, 2, 4, 5, 6, 7, 8, 11, 12, 13, 14, 15, 16, and 17.
  • Use chemicals and follow all safety rules.
  • Work overtime and weekends as needed.
  • Accurately record Critical Control Points (CCPs) on smokehouse control reports.
  • Maintain proper product flow, cleanliness, and organization in the work area.
  • Follow standardized work procedures and perform equipment changeovers.
  • Manage employee rotation and ensure required exercises are performed.
  • Monitor and improve product yields by minimizing inedible, rework, and giveaway.
  • Solve problems related to yield losses on assigned equipment.
  • Maintain a safe and clean work area, ensuring meat does not become contaminated.
  • Check product racks for proper spacing, tying, and hanging before processing.
  • Monitor smokehouses and equipment for correct functioning; report mechanical issues to maintenance.
  • Ensure accuracy of time cycles and check sheets.
  • Complete all required paperwork accurately and in a timely manner.
  • Support management decisions and foster a productive work environment.
  • Apply HACCP knowledge to maintain food safety and quality standards.
  • Produce high-quality products by adhering to company standards for color, taste, texture, moisture, and bacteria destruction.
  • Maintain maximum machinery performance and follow pre-planned smoke schedules.
  • Adapt to changes in the smokehouse department and seek ways to improve efficiency.
  • Direct and instruct other smokehouse operators to ensure safe and timely work schedules.
  • Hold operations if safety or quality issues arise and escalate to supervisors or Quality Assurance (QA).

Requirements

  • Punctuality and good attendance.
  • Basic communication, math, reading, and writing skills in English.
  • Ability to complete quality and safety training.
  • Capability to work at a fast pace in a repetitive environment.
  • Teamwork and ability to work with a diverse workforce.
  • Flexibility to work overtime and weekends as needed.
  • Quality and safety-minded, reliable, precise, and self-motivated.
  • Must be 18 years or older.
