Responsibilities

  • Aids in the overall effective management of the catering and concessions operations.
  • Maintains compliance with all alcohol service policies during events.
  • Makes sure alcohol service is fully compliant with policies throughout the event.
  • Reports any alcohol service or compliance issues to Spectra management immediately.
  • Assists in managing catered and concession events from setup to teardown, including communication with hourly staff, culinary staff, and guests.
  • Ensures the legal, efficient, professional, and profitable operation of the venue.
  • Analyzes financial reports, including budgets, projections, and labor and product costs.
  • Authorizes, reviews, and amends policies and procedures, as requested by the General Manager.
  • Oversees scheduling and labor allocation.
  • Analyzes ticket sales to anticipate staffing needs and target market demographics; determines and projects point-of-sale to guest ratio.
  • Evaluates purchasing data to identify purchasing patterns and accurately cost goods.
  • Manages and assists supervisors in preparing and attaining future goals.
  • Trains and develops an effective team.
  • Reviews and assists in the development of menus and marketing plans with the appropriate department heads.
  • Establishes and maintains professional relationships with show managers, suppliers, vendors, and the public.

Qualifications

  • Bachelor’s degree (BA/BS) in a business-related or hospitality management field is strongly preferred.
  • Minimum 2 years of management experience in the food and beverage industry.
  • Minimum 3-5+ years’ experience in high-volume banquets, concessions, a la carte restaurant catering, or premium/suite catering experience (or a combination of the three).
  • Previous professional experience with catering sales is strongly preferred.
  • Previous professional experience working / managing concessions operations: arena, stadium, and amphitheater experience strongly preferred.
  • Clear, professional, and courteous communication skills with employees, co-workers, volunteers, management staff, and guests.
  • Ability to make quick and sound business/operations decisions under pressure.
  • Solid working knowledge of computer applications: Microsoft Office, POS systems, and timekeeping systems.
  • Team-oriented, fast-paced, event-driven environment experience.
  • Familiarity with inventory cost control and menu planning.
  • Thorough working knowledge of sanitation requirements, food preparation guidelines, alcohol service policies, safety standards, etc., pertaining to OVG and venue concession and premium services operations.
  • Basic and complex math functions (addition, subtraction, multiplication, division, percentages).
  • Cash handling accuracy and responsibility.
  • High standards of integrity, professionalism, ethics, and confidentiality.

Pay

$70,000 - $75,000 annually

Schedule

Open availability, professional presentation, outstanding interpersonal skills, self-direction, strong management, and independent decision-making skills are required. This role requires maintaining excellent attendance and being available to work a variable event-driven schedule, which includes evenings and weekends.
