Duties And Responsibilities
- Participate in the preparation and service of food for café/restaurant customers, patients, daily specials, and special functions
- Use food safety techniques in accordance with FDA and Health Department standards, including but not limited to: Proper hand washing, Temperature monitoring & recording of all foods & refrigeration, Proper storage and handling techniques for food are used (such as labels, dates, covers and first in/first out (FIFO) rotation, etc.)
- Approved hats or hairnets are worn in food preparation areas
- Prepare quality food that meets taste and appearance standards
- Foods will be prepared from standardized recipes making only appropriate and/or approved substitutions. Any changes related to patient modified diets must be approved by a Registered Dietitian
- Food is plated and displayed to create an appealing presentation
- Food is prepared for delivery within a timely manner, according to department policy and procedures
- Must be able to handle a minimum of 15 tickets in 15 minutes
- Show and maintain a sense of urgency when performing tasks
- Show proper and fluent knife sills including cutting, maintenance and cleaning
- Prepare back stocks to meet patient and customer orders in a timely manner and maintain sufficient levels of stock for all meals during shifts
- Maintain stock levels of station and refill/prep as needed
- Pull needed items from the freezer in adequate time to allow product to thaw using proper thawing methods
- Maintain equipment utilized in a clean, safe, and sanitized condition
- Absorb and maintain cleanliness of the kitchen and café facilities
- Maintain department records
- Record hot and held food and refrigeration temperatures in temperature logs according to department procedures and policy
- Record amounts of prepared food and left over to assist in planning appropriate food quantities
- Maintain current Food Handlers’ Permit
- Complete the standard Idaho Falls Community Hospital (IFCH), Nutritional Services Department and position-specific Health Stream educations in a timely manner
- Participate in intra and interdepartmental meetings
- Attend the regularly scheduled Nutritional Services staff meetings
- Attend additional meetings as needed
- Check emails regularly for any updates/changes throughout the week - abiding by hospital policy of checking email a minimum of twice per week
Qualifications
- Education/Certification: High school graduate (or equivalent); Food Handler’s Permit (required within 30 days of employment)
- Experience: Minimum 3 years food-service cooking experience required
