Mozzarella Maker (Morning Shifts)

About the role

A Mozzarella Maker is responsible for making fresh mozzarella according to Eataly’s authentic Italian recipe and reports to the Fresh Market Manager.

Responsibilities

• Utilize fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, following Eataly recipes
• Engage all senses to taste, smell, feel, listen, and observe each batch to maintain and elevate quality
• Record daily weights of ingredients used, batch sizes, and amounts transferred to other outlets
• Adjust time cycles and ingredients as necessary for succeeding batches
• Handle products with careful attention to quality control and waste management
• Weigh, package, and label mozzarella lab offerings
• Stock display refrigerators neatly, accurately, and in a timely manner
• Provide guest service and information on the mozzarella-making process
• Clean work station thoroughly following food safety best practices
• Ensure collateral supplies are in stock and properly utilized in the lab
• Perform other duties as required or assigned

Requirements

• Availability to work a flexible schedule, including weekends
• Ability to lift up to 50 pounds
• Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending, and squatting
• Ability to work within a kitchen production environment and use commercial kitchen equipment

Qualifications

• Basic math skills
• Good communication skills
• Excellent attention to detail
• Previous cheese making and/or food production experience preferred
• High school graduate or equivalent preferred
