About the role
As a Mozzarella Maker at Eataly, you will craft fresh mozzarella daily using Eataly’s authentic Italian recipe. This hands-on role involves heating, stretching, and shaping mozzarella curd by hand, as well as producing other pasta filata offerings. You’ll work closely with the Fresh Market Manager to maintain quality, manage waste, and ensure product consistency.
Responsibilities
- Produce fresh mozzarella and other pasta filata items daily according to Eataly’s recipes.
- Use sensory evaluation (taste, smell, touch, sight, sound) to assess and maintain quality for each batch.
- Record daily production details, including ingredient weights, batch sizes, and transfers to other outlets.
- Adjust time cycles and ingredient quantities as needed for subsequent batches.
- Handle products with care to ensure quality control and minimize waste.
- Weigh, package, and label mozzarella lab offerings accurately.
- Stock display refrigerators neatly, accurately, and promptly.
- Provide guest service and share information about the mozzarella-making process.
- Maintain a clean workstation following food safety best practices.
- Ensure collateral supplies are stocked and properly utilized in the lab.
- Perform additional duties as assigned.
Requirements
- Basic math skills.
- Good communication skills and excellent attention to detail.
- Previous cheese-making and/or food production experience preferred.
- High school diploma or equivalent preferred.
- Ability to work a flexible schedule, including weekends.
- Ability to lift up to 50 pounds.
- Ability to stand, walk, bend, and squat for up to 8 hours in a kitchen production environment.
- Comfort working with commercial kitchen equipment.
