About the role

A Beef Modernization Sorter performs precision knife cuts on the harvest floor, making decisions related to pathology, presentation, and sanitary dressing while ensuring food safety and quality are the primary responsibility. The role involves intensive and recurring training, training/educating others, and close collaboration with various harvest floor departments and USDA‑FSIS Consumer Safety Inspectors in a high‑paced environment.

Responsibilities

  • Perform precision knife cuts and assess pathology, presentation, and possible sanitary dressing deficiencies.
  • Maintain a strong focus on food safety and quality.
  • Participate in intensive and recurring training and be willing to train/educate others.
  • Work closely with harvest floor departments and USDA‑FSIS Consumer Safety Inspectors.
  • Operate effectively in a team‑oriented, high‑paced setting.
  • Lift, push, and pull product repetitively as required.

Requirements

  • Harvest floor knife experience.
  • Ability to sharpen a knife and maintain a sharp edge.
  • Willingness to learn anatomy, physiology, and pathological disease processes.
  • Excellent communication skills.
  • Detail‑oriented and disciplined.
  • Interest in mentally challenging work.
  • Ability to lift, push, and pull product repetitively.
