Assist the Meat & Seafood Manager, and to act in his/her absence in overseeing the department; to select and cut fresh meat and seafood; to supervise department staff; and to meet objectives for sales, margin and customer service. Requirements Participate in Management Team responsibilities as designated, such as policy developmentParticipate in Person in Charge shifts as assigned depending on the store’s needsPlan attractive displays with uniform signage; ensure displays are fully stocked, rotated, and fronted to ensure freshness and abundanceEnsure accurate, up-to-date price, ingredient, and date labeling of itemsAssist in planning and implementing seasonal programsNegotiate with suppliers for favorable prices, terms, quality, and deliveryEnsure accurate coding and up to date shelf tags and/or signageConsult with manager on updating UPCs, PLUs and pricing information in the POS register systemMaintain level of high quality products; maintain a sufficient amount of inventory, with limited out of stock items to maximize sales and turnoverReceive orders, or ensure proper receiving by department staff, in accordance with established proceduresReview invoices for accuracy, break into inventory categories and pass to Bookkeeping for paymentGet credit from suppliers where applicable for returned or low-quality product. Ensure department waste items are disposed of properly Meat Cutting Maintain standards for meat cutting to meet quality, pricing, margin control, and customer service goalsCut meat and oversee meat cutting for departmentAdhere to health and safety standards and practices for department meat cutting and handling Department Operations Help plan attractive meat and seafood displays, using color and texture to enhanceSee that displays are replenished, rotated, checked for qualityAssist in setting prices to achieve margin goalsConduct periodic price surveys of identified competitorsAssist in ensuring POS system and scales are accurate and costs and pricing are currentMaintain waste logs and know percentage of waste each week Personnel Management—for Department Staff Ensure on-the-job trainingTake disciplinary action as needed following established policiesAssist in scheduling hours for department staff within budget, and review time cardsOrganize meetings of meat and seafood department staff as needed Department Maintenance Ensure food prep, work area, utensils, equipment and display areas are maintained in sanitary, orderly condition meeting or exceeding health department standardsFollow standard Sanitation Operating Procedures schedule including: deep cleaning schedules, good health department scores, pest awareness and control, equipment maintenance and cleaningsFollow USDA and NH State Law regarding the use, labeling, and handling of allergensFollow standard Sanitation Operating Procedures schedule including: deep cleaning schedules, good health department scores, pest awareness and control, equipment maintenance and cleaningsEnsure proper storage and labeling procedures as per health department and organic standardsParticipate in all monthly, quarterly and annual inventory countsMaintain department equipment in working order. Notify management of equipment problems or requirements.
