About the role

El Molino is a Mexico City-inspired bistro from Vandelay Companies that blends elevated Mexican cuisine, wood-fired cooking, refined cocktails, and warm hospitality in a sophisticated and energetic setting. Known for its premium fajitas, chef-driven cuisine, handcrafted margaritas, and lively atmosphere, El Molino is a place where guests gather to celebrate, connect, and create lasting memories. Every detail, from the quality of the food and beverage program to the warmth of each interaction, is thoughtfully designed to create an experience that is memorable, welcoming, and distinctly Vandelay.

Core Responsibilities

  • Execute all menu recipes with precision, consistency, and adherence to Vandelay’s culinary standards.
  • Prepare dishes according to guest requests, portion guidelines, temperature specifications, and company timing standards.
  • Maintain a clean, organized, and well-stocked station throughout service, following all food safety and sanitation procedures.
  • Prioritize and manage multiple tickets at once, ensuring accuracy and seamless pacing during high-volume periods.
  • Collaborate closely with the culinary team and front-of-house partners to support smooth, efficient service.
  • Follow proper cooking techniques, knife skills, and equipment usage to ensure quality and safety.
  • Uphold plate presentation standards so every dish leaving the kitchen reflects Vandelay’s commitment to excellence.
  • Assist with daily prep, stock rotation, and storage to maintain freshness and consistency across all menu items.
  • Execute opening, mid-shift, and closing procedures according to kitchen guidelines.

Requirements

  • Must be at least 18 years old.
  • 1-2 years of culinary experience in a full-service, high-volume restaurant.
  • Strong work ethic with a passion for delivering high-quality food and guest experiences.
  • Able to work efficiently and accurately in a fast-paced, high-volume kitchen.
  • Solid understanding of culinary fundamentals, including cooking methods, mise en place, and knife skills.
  • Detail-oriented with a commitment to consistency, cleanliness, and proper food safety practices.
  • Able to take direction, receive feedback, and work collaboratively in a team-driven environment.
  • Food handler certification as required by state and local regulations.
  • Desire to learn, grow, and refine skills within Vandelay’s culinary program.

Physical Requirements

  • Ability to lift up to 50 pounds.
  • Ability to work standing and walking for extended periods of time.
