About the role
Prepare lunch and dinner for à la carte functions in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.
Responsibilities
- Prepare food items according to consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mis en place and set-up station for lunch and/or dinner service.
- Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs.
- Experience in pizza and pasta preparation, wood-fired grill cooking preferred.
- Fine dining and upscale casual restaurant experience preferred; oyster bar shucker background a plus.
- Operate, maintain, and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat-top grill.
- Date all food containers and rotate as per policies, ensuring all perishables are kept at proper temperatures.
- Check parts to shift use, determine necessary preparation, freezer pull, and line set-up; note any out-of-stock items or possible shortages.
- Return all unused food items to designated storage areas, covering and dating all perishables.
- Assist in setting up plans and actions to correct food cost problems; control food waste, loss, and usage per policies.
- Work harmoniously and professionally with co-workers and supervisors.
Requirements
- Cooking school or culinary institute education or equivalent experience.
- Minimum two years of culinary or related work experience; advanced culinary knowledge expected.
- Working knowledge of kitchen equipment, generally learned on-the-job.
- Proficient knife skills and ability to multi-task.
- Must be able to lift 40 lbs and stand for long periods of time; bending and lifting required.
- This position requires night and weekend work.
