About the role
The Hilton Garden Inn Bozeman is a full-service hotel offering a warm, welcoming stay and memorable dining experiences through its Garden Grille & Bar, evening room service, and banquet/catering functions. As a Line Cook, you'll be a key member of a close-knit back-of-house team responsible for preparing quality meals that reflect the Hilton Garden Inn brand standard and the pride we take in our Bozeman hospitality.
What you'll do
- Prepare and cook menu items to Hilton Garden Inn brand standards and recipe specifications for breakfast, dinner, room service, and banquet functions, ensuring consistent quality, presentation, and portion control.
- Set up and break down stations (sauté, grill, fry, pantry, etc.) before and after each service, including mise en place, stocking, and organizing ingredients for efficient service.
- Execute tickets during service in a timely and accurate manner, coordinating with fellow cooks and F&B servers to ensure a smooth dining experience for our guests.
- Follow all food safety and sanitation standards, including proper food handling, storage, labeling/dating, temperature logs, and adherence to ServSafe and local Gallatin County health department requirements.
- Maintain a clean and organized work area, including line, prep areas, walk-ins, freezers, and dry storage, and assist with deep-cleaning schedules as assigned.
- Support inventory and cost control by minimizing waste, rotating stock (FIFO), communicating low-stock items to the Chef, and participating in periodic inventory counts.
- Aid in banquet and catering events, including plated meals, buffets, and breaks, ensuring timing and presentation meet guest expectations.
- Collaborate with team members across the kitchen and dining room, communicating professionally and stepping in to support wherever needed during busy periods.
- Adhere to Hilton brand standards, GHG policies, and hotel safety procedures, including proper uniform, personal hygiene, and safe use of kitchen equipment.
Qualifications
- Required:
- - 1+ years of prior line cook or kitchen experience in a restaurant, hotel, or high-volume food service environment.
- - Working knowledge of standard kitchen equipment (flat top, grill, fryer, convection oven, slicer, mixer) and basic culinary techniques.
- - Current SERV Safe Food Handler certification, or willingness to obtain within 30 days of hire.
- - Ability to read, follow, and execute standardized recipes and plating guides consistently.
- - Availability to work a flexible schedule, including early mornings, evenings, weekends, and holidays as business demands.
- - Ability to stand for extended periods (8+ hours), lift up to 50 lbs., and work in a hot, fast-paced kitchen environment.
- - Strong sense of urgency, attention to detail, and a team-first attitude.
- Preferred:
- - Prior experience in a Hilton, Marriott, or comparable branded hotel kitchen preferred
- - Familiarity with banquet and catering services
- - Basic knowledge of inventory rotation, waste tracking, and food cost principles.
