Overview
Otterbein is seeking a Lead Cook to join their team at a vibrant, not-for-profit retirement community. The role involves creating delicious, attractive meals for residents and significantly impacting their quality of life. Shifts are full-time.
Responsibilities
- Assist the Executive Chef in menu development, staffing, specials, etc. as needed.
- Take reservations and execute hibachi meals in the main restaurant.
- Determine and purchase food items needed for the assigned area; ensure food costs are controlled.
- Supervise food preparation, cooking, and plating methods and techniques.
- Ensure correct use of kitchen equipment.
- Complete production records, including used and unused portions and shortages of product.
- Interview, hire, and evaluate culinary staff; assist in evaluations when absent of Executive Chef.
- Manage kitchen operations in absence of Executive Chef.
- Achieve deadlines in food production based on production orders.
- Solve work problems or assist workers in solving related issues.
- Maintain a professional appearance at all times.
- Suggest and follow up on plans to motivate team members.
- Follow all company policies and procedures.
- Complete assigned shifts and assist with other functions as needed.
Food Safety/Sanitation
- Ensure proper presentation, portion control, and serving temperatures.
- Maintain sanitation and orderliness of equipment, supplies, and utensils.
- Handle foods appropriately during preparation.
- Prepare food according to approved recipes and production standards.
- Clean display equipment during meal service.
- Clean equipment as assigned and promptly.
- Clean workstations thoroughly before leaving the area for other assignments.
Qualifications
- Education: Culinary Degree preferred. High School or GED required.
- Licensure/Certification: Serv Safe
