Kitchen Prep Associate - Dumpling

About the role

As a Dumpling Prep / Trainee, you are part of the heart of the Din Tai Fung kitchen. In this role, you prepare, assemble, fold, and steam the dumplings that our guests know and love. Working in our show kitchen, you’ll help showcase the star of our menu while playing a key role on the kitchen team and in the overall guest experience.

Responsibilities

• Prepare dumplings from start to finish, including measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming dumplings
• Ensure proper meat and allergen identifiers are added
• Maintain a clean and organized dumpling room
• Label items according to procedures and regulations
• Participate in monthly staff and dumpling meetings as part of your development
• Keep all kitchen areas clean and sanitized
• Organize items within the walk-in coolers and freezers
• Lift and move boxes, bags, chairs, and tables (up to 50 pounds)
• Assist with regular deep cleaning of the kitchen
• Maintain confidentiality regarding all proprietary information, including but not limited to recipes and Standard Operating Procedures

Requirements

• Friendly, energetic, and highly motivated
• Ability to thrive in a fast-paced, team-oriented environment
• Dumpling experience is not required; experience in prep, specifically with dough (pastry, pizza, etc.) is a plus
• Open availability
• Eager to learn and enjoys being challenged
• Ability to stand for long periods of time
• Must be 18 years of age or older and able to provide documentation to work in the United States legally

Training Expectations

Your journey at Din Tai Fung will begin as a Dumpling Trainee. Our hands-on dumpling training program is designed to provide you with the skills and knowledge you need to ensure you have the tools for success. Upon completion of the program, graduates will transition into the Dumpling Prep role.
