Responsibilities

  • Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures.
  • Demonstrate a commitment to responsible gaming and alcohol service by notifying management of concerns and observations discreetly.
  • Identify and address business needs, implementing solutions that improve operations, customer impact, cost reduction, and revenue generation.
  • Develop and administer controls for all phases of the restaurant to achieve economic and profitable outcomes, while maintaining established standards.
  • Spearhead menu item changes based on product mix reviews and guest feedback, and collaborate with the chef to stay current with industry trends and standards.
  • Support the casino by offering exceptional food to VIP guests and during special events.
  • Institute cost control procedures, manage inventory levels, and analyze data to forecast future fiscal results.
  • Lead projects as assigned, addressing guest complaints promptly and effectively.
  • Log and track safety and sanitation requirements, and ensure direct reports consistently reinforce the company's Mission, Values, and policies.
  • Protect, promote, and advance the company's brand through consistent actions and communications.
  • Mentor Seminole Tribe members to prepare them for leadership roles within the property.

Requirements

  • A proven track record of progressive culinary management.
  • Culinary degree and/or four years of progressive culinary management experience.
  • A combination of education and experience will be considered.
  • Strong knowledge in financial information.
  • Proficiency in Excel, Word, PowerPoint, and POS, MMS, or other systems.

Qualifications

  • Must be able to perform tasks involving bending, lifting up to 20 pounds, and standing for extended periods.
  • Exposure to casino-related environmental factors such as second-hand smoke and excessive noise.
  • Exposure to a standard kitchen environment with potential hazards like slippery floors, loud noises, and dangerous equipment.
