This position supervises inmate labor and team members in a correctional facility’s food service operation, ensuring accurate and efficient preparation and serving of food items while adhering to food handling regulations.
Schedule
- Four days weekly with alternating weekends
- 8:00 AM to 6:00 PM (may extend to 6:30 PM)
- Must be available to work some weekends and holidays
Responsibilities
- Supervise inmate labor and/or team members during food prep and service shifts
- Prepare, assist, or instruct in the preparation of quality foods according to planned menus, recipes, and work instructions
- Ensure proper and sanitary food storage
- Serve food during planned meal schedules following department policies and procedures
- Utilize kitchen utensils and equipment to cook, prepare, and serve food according to recipes
- Use proper utensils to serve menued portions and meet clients’ nutritional needs
- Follow all food safety regulations pertaining to sanitation, food handling, and storage
- Train other food service workers
- Maintain a clean work area, including refrigerators, freezers, cooking equipment, and serving equipment
- Keep kitchen floors clean from excess food/trash and manage garbage collection
- Ensure the kitchen is ready for food prep/serving, including sweeping, mopping, and dishwashing
- Review proper portions and utensils for service
- Promote a healthy and safe work environment for employees and inmates
- Perform physical tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
- Perform other related duties as assigned
Requirements
- High School Diploma or GED and/or equivalent experience
- Must be at least 18 years of age
- Prior institutional food service or restaurant experience is preferred
