Food Service Supervisor
Gana-A'Yoo Services Corporation (GSC) supports the National Science Foundation managed United States Antarctic Program as part of the Antarctic Support Contract (ASC). We are currently seeking a Food Service Supervisor at Palmer Station, Antarctica.
About the role
As a Food Service Supervisor, you are responsible for instituting and monitoring total quality control and quality assurance of the policies, standards, and procedural implementations set forth by the food services department. You will assist and direct all positions as needed, ensuring the highest level of quality, cleanliness, and customer satisfaction in food preparation and dining hall presentation.
Responsibilities
- Prepare and develop all items on a 35-day menu cycle, holiday menu items, and food required for special occasions.
- Plan, direct, and coordinate activities of Sous Chefs, Steward Coordinator, and Production Cooks in the kitchens, serving areas, and dining halls to ensure quality and cleanliness.
- Follow standardized recipes and develop high-volume recipes as needed.
- Plan daily food production needs and establish an effective leftover usage program.
- Train and supervise Production Cooks in compiling and ordering food products, supplies, and materials, ensuring daily availability.
- Assist and supervise in all areas of the kitchen, serving, and dining areas, including instruction on proper use, care, and cleaning of equipment.
- Develop, maintain, and approve administrative materials such as budget expenditures, operational reports, cost analysis, time sheets, payroll matters, and personnel records.
- Maintain client and customer satisfaction through effective communication and feedback.
- Plan, assign, and direct employee schedules, including deployment and redeployment.
- Conduct training programs, monitor and evaluate performance, and address complaints or problems.
- Maintain a safe and healthy working environment, adhering to ASC Environmental Health & Safety, Quality Assurance programs, HACCP, and ServSafe policies.
- Monitor overall quality, preparation, production, and presentation of food for all shifts, functions, and special events.
- Document and communicate daily operational and personnel information to the Program Executive Chef.
- Maintain proper documentation of food temperature logs, production records, and food safety/sanitation requirements.
- Monitor adherence to proper labeling, dating of food, recipes, and cooking techniques.
- Resolve disputes and counsel employees on issues.
- Work with the Program Executive Chef to initiate progressive changes in operational goals.
- Comply with all ASC Environmental Health & Safety and Quality Assurance requirements and provide necessary documentation.
- Ensure subordinate employees are trained and understand ASC requirements, maintaining necessary documentation.
- Track and report data related to metrics, supporting ASC goals and contractual commitments.
- Participate in inter- and intra-departmental meetings, including safety, production, and supervisor meetings.
- Interact with customers to obtain feedback on food quality, service, and sanitation, making adjustments as needed.
- Assign tasks and projects to personnel to maintain overall organization of the food service department.
- Stand for up to twelve hours a day, six days a week.
- Lift up to the safety regulation maximum from the floor to a table or cart safely.
- Implement and maintain a safe workplace program, ensuring safety is the highest priority.
- Responsible for safety reporting, including soreness, injuries, and near misses.
- Perform other duties as required.
Requirements
- High school education or GED required.
- Graduate of a culinary arts or apprenticeship program, or five years of supervisory experience in high-volume food service accepted in lieu of degree.
- Current ServSafe Food Handler certificate (must be obtained prior to deployment).
- Valid driver’s license.
- Valid U.S. Passport.
- Minimum of 7 years cooking experience, with 3 years supervisory responsibilities in high-volume facilities (not including convenience or fast food).
- Previous experience with Food Services in Antarctica may be accepted in lieu of minimum experience.
- US citizenship or permanent residency required.
