About the role
This position supervises all inmate food service employees, ensuring the accurate preparation and delivery of food orders while maintaining internal security and compliance with health, fire, and OSHA standards.
Responsibilities
- Interview, hire, evaluate, and terminate inmate food service employees.
- Train and instruct cooks, bakers, kitchen, and dining staff in all phases of their duties; supervise daily performance.
- Maintain internal security of the cafeteria.
- Work with the inmate representative committee to resolve problems and complaints.
- Prepare accurate weekly food orders and deliveries.
- Prepare cook’s work sheets in strict accordance with the SCDC master menu and maintain records for a 5-year period.
- Meet with health, fire, and OSHA inspections.
- Ensure all required maintenance and repair work is performed on cafeteria equipment.
- Successfully complete four (4) weeks of SCDC Basic Training upon hire.
Requirements
- Related food service experience.
- Experience in quantity and quality cooking.
- Certified as a Hazard Analysis and Critical Control Point (HACCP) and/or ServSafe manager, or must attain certification within six (6) months of employment.
- Certified by SCDC Training Academy or must successfully complete SCDC basic training upon hire.
- Successfully complete basic supervisory courses within eighteen (18) months of employment.

- Prior supervisory experience (preferred but not required).
