About the role

The Manager, Food & Beverage is responsible for the overall operation and profitability of assigned venues at Yaamava Resort & Casino. This includes developing and maintaining high-performing teams, achieving financial and enterprise objectives, maintaining inventory control, ensuring high-quality customer service, and complying with health and safety regulations.

Responsibilities

  • Accountable for all Front of House (FOH) team members assigned to the venue(s).
  • Implement training programs to ensure high-quality service aligned with Yaamava’s brand standards and maintain product knowledge.
  • Ensure optimal operations during business hours by monitoring customer satisfaction and resolving complaints.
  • Direct the development and administration of controls for all FOH operations to maintain profitability and brand standards.
  • Manage assigned venue(s) to meet budgeted revenue, food cost, expense, headcount, and profit targets.
  • Explain unfavorable variances monthly to Food & Beverage leadership and implement corrective action plans.
  • Collaborate with the assigned venue Chef to oversee food costs, ensure menu attractiveness, and verify food & beverage presentation meets brand standards.
  • Maintain accurate inventory of china, glassware, cutlery, and other supplies, minimizing replacement costs and waste.
  • Oversee venue cleanliness and sanitation to meet established codes.
  • Direct maintenance of all equipment, order repairs, and recommend replacements as needed.
  • Perform other duties as assigned to support department efficiency.

Supervisory Responsibilities

  • Interview, hire, train, assign, review, and direct employees.
  • Evaluate and appraise performance, reward and discipline employees, and address complaints.
  • Make hiring decisions and design individual development plans with succession planning for key roles.

Qualifications

  • Bachelor’s degree in Hospitality Management, Food Service, Business, or related field required (or equivalent experience).
  • Minimum of three (3) years of restaurant or related hospitality experience.
  • Bar experience strongly preferred.
  • Minimum of three (3) years of supervisory experience.

Skills

  • Proficient in Microsoft Office (Outlook, Excel, Word).
  • Strong leadership and people management skills with the ability to motivate and collaborate.
  • Ability to communicate change effectively, overcome resistance, and build commitment.
  • Strong delegation, multitasking, prioritization, and time management skills in a fast-paced environment.
  • Strict adherence to confidentiality and compliance with legal and regulatory requirements.
  • Ability to read, write, and communicate effectively in English.
  • Basic mathematical skills (addition, subtraction, multiplication, division).
  • Ability to provide friendly and efficient service to guests and team members.
  • Ability to work under pressure and remain calm during busy periods.

Required Licenses & Certifications

  • May require a gaming license at the discretion of the San Manuel Tribal Gaming Commission.
  • Must obtain and maintain Responsible Beverage Service (RBS) certification.
  • Must obtain and maintain ServSafe certification.

Driving Responsibilities

Role requires regular commuting between locations. A valid driver’s license and vehicle insurance with minimum liability limits are required. The role will not operate or drive Tribe-owned or patron vehicles.

Physical Requirements & Working Conditions

  • Primary work environment is a climate-controlled Casino & Resort setting.
  • Travel required for meetings, trade shows, and conferences.
  • May require evening, weekend, and holiday shifts.
  • Fast-paced, high-demand environment.
  • Strength to exert up to 10 pounds of force occasionally and move up to 40 pounds occasionally.
  • Sedentary work involving sitting most of the time, with frequent computer and office equipment use.
  • Physical activities include balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, and repetitive motions.
  • Hearing sufficient for in-person, videoconference, and telephone conversations.
  • Speech sufficient to be understood in person, in groups, in meetings, via videoconference, and over the telephone.
  • Visual acuity for data analysis, transcription, computer work, and visual inspections.
  • Mobility to safely move in an office environment, walk, stoop, bend, and operate a motor vehicle for travel.
  • Endurance to sit, walk, and stand for extended periods.
  • Must present a neat, clean, and well-groomed appearance per departmental policy.
  • May be exposed to fumes or airborne particles, including secondhand smoke. Reasonable accommodation will be made in compliance with applicable law.
