About the role

This position manages all day-to-day operations of the Food and Beverage department to ensure exceptional customer service, establish the tone for shifts, train staff, and ensure adherence to all established operations and initiatives. The role aims to deliver the Five Star Experience to both guests and team members, embodying the Casino's commitment to excellence.

Responsibilities

  • Provide outstanding customer service to guests and all other employees by exceeding the mission statement.
  • Lead by example and fulfill the Casino's Five Star Experience, Mission Statement, and Service Promise.
  • Coach and support staff to ensure they have the skills, tools, and resources to perform their jobs effectively, including delivering the Five Star Experience.
  • Administer company and departmental policies and procedures, including safety regulations.
  • Estimate food and beverage costs and manage inventory.
  • Plan menus and manage dining room, bar, and banquet operations.
  • Investigate and resolve food quality and service complaints.
  • Monitor financial transactions and budget adherence.
  • Manage POS systems for billing and final checks.
  • Train and develop staff through daily stand-up meetings, SMART philosophy, coaching, counseling, and mentoring.
  • Ensure proper liquor requisition procedures and maintain inventory levels.
  • Develop and maintain daily checklists, product pars, and clean-up lists.
  • Ensure consistent restaurant and beverage standards, guest experiences, and product quality.
  • Develop and implement ideas for advertising, marketing, and product specials to increase revenues.
  • Utilize sales reports and historical data to create a scheduling matrix.
  • Conduct monthly outlet beverage inventories to meet or improve pouring cost budgets.
  • Absolutely adhere to state, federal, and local liquor regulations.
  • Train staff on policies, procedures, and service standards.
  • Maintain cash handling policies and procedures.
  • Ensure proper stocking of food and beverage outlets.
  • Assist with interviewing job applicants.
  • Maintain excellent communications with all directors and supervisors.
  • Implement and adhere to departmental policies and procedures.
  • Ensure budget adherence by implementing effective processes and procedures.
  • Prepare necessary data for the budget in area of responsibility.
  • Stay informed about industry trends and local competition.
  • Create and maintain a positive work environment.
  • Maintain a disciplined environment and implement practices promoting safety, quality, and productivity.
  • Help coordinate and supervise training, assignments, and development of subordinates.
  • Ensure compliance with all Minimum Internal Control Standards (MICS) and Tribal Internal Control Standards (TICS).
  • Present a positive image of the Tribal organization to guests and vendors.
  • Follow all safety policies and procedures and attend all scheduled safety meetings and training.
  • Able to make difficult decisions in a fair and honest manner.
  • Strong verbal and written communication skills.
  • Perform any other duties as assigned.

Qualifications

  • High School Degree (or GED)
  • Five (5) years (or equivalent) of supervisory/management experience
  • Must pass periodic random drug screens
  • Pass background suitability investigation
  • Obtain a Tribal Gaming License
  • Obtain all other applicable certifications and licenses
  • Proof of eligibility to work in the United States within 72 hours of employment
