Food & Beverage Director
General Purpose
The Director of Food and Beverage oversees all food and beverage facets including a la carte locations, banquet/event spaces, and satellite locations including the pool and halfway house. The role is part of Troon, a global leader in golf and community management.
Essential Duties
- Directs and oversees all food and beverage sub-departments (catering, restaurants, banquets, kitchens, purchasing and stewards).
- Prepares and monitors annual budget, revenue goals and expenses for the food and beverage department, and generates business volume forecasts.
- Reviews and analyzes financial and data results/reports to monitor performance and take corrective actions.
- Maintains inventory control and calculates monthly analysis and reconciliations.
- Identifies and implements strategies to control food costs, bar costs, and other expenses.
- Participates in menu creation, ensuring offerings appeal to various outlets and align with profitability goals.
- Oversees event planning, execution, and closure with event coordinators and food and beverage managers.
- Implements policies and procedures for the food and beverage department, ensuring compliance with company, federal, state, and local standards.
- Hires, trains, plans, assigns, directs work, evaluates performance, rewards, disciplines, and addresses complaints of department members.
- Manages department members including sous chef, line cooks, stewards, food and beverage managers, bar manager, servers, bartenders, server assistants.
- Ensures regular and reliable attendance.
Education/Experience
Bachelor’s degree (BA) from a four-year college or university; two or more years related experience and/or training; or equivalent combination of education and experience.
Physical Demands
Frequently stands, walks, tastes, smells, talks, hears, uses hands, and reaches with hands and arms. Occasional sitting, climbing, balancing, stooping, kneeling, crawling, or crouching. Occasional lifting up to 50 pounds.
Environment/Noise
Can work in wet or humid conditions (non-weather), near moving mechanical parts, near fumes or airborne particles, with toxic or caustic chemicals, and in extreme heat or cold (non-weather). Noise level is moderate.
